These were the best deviled eggs! I figured with easter right around the corner I should start experimenting
this recipe was striaght out of my BonAppetite magazine- except I used 8 eggs instead of 12, so had lots of filling. YUM!
slice hardboiled eggs in half, scoop yolk into bowl
cook 3 slices bacon, drain and measure 2 tbl of the fat (yes, but its SO GOOD) and add to the yolks. mix in 1/3 cup mayo, 2 tsp dijon mustard, 1 tsp chopped scallions and salt and pepper. Chop bacon add most to the yolk mixture, keeping some for garnish. put into ziplock bag, cut the corner off and pipe into yolks. top with bacon and eat. AMAZING!!! (I had these and strawberries for lunch and it was perfect and satisfying)
